Peaches N Cream
Scarlet Peach and Mr. Peach (AKA The Peaches) have been living primal since March. Although the change was a little difficult at first, we are reaping the primal benefits and are loving our new bodies! We are searching for recipes that not only satisfy our needs, but also help us not feel deprived. The following recipe is one of our absolute favorites. And if you can guess our main, scrumptious, luscious ingredient is... PEACHES!
In honor of our boutique, of course. This delectable recipe serves 2.
Ingredients:
2 fresh peaches (halved with pits removed)
2 tbs of coconut oil
Cinnamon and vanilla extract
4 tbs of whisked coconut cream or milk
2 tbs of chopped walnuts or pecans
Preheat the oven to 350 degrees
Grab those beautiful juicy peaches and cut them in halves. On the cut side of the peaches, rub the coconut oil and sprinkle those delicious babies with the cinnamon. Place the sprinkled peaches on a baking sheet lined with foil and place the sheet into the oven. Allow the peaches to bake for 20 minutes (or until browned or soft to the touch).
Add vanilla to the coconut cream to taste. Once cooled and ready to serve, drizzle the roasted peaches with the cream and top it off with those tasty walnuts.
